Tomatoes Pack a Healthy Punch

The all-in-one nutrient powerhouse, bone builder, heart protector and cancer fighter - these farm-stand beauties pack amazing flavor and health benefits.

We found these Fresh & Healthy Power Meals in 20 minutes or less, in the July 2014 issue of Runner's World magazine:

5 minutes - GUAC-TOM POPPERS

  • Cut 6 Roma tomatoes or large cherry tomatoes in half crosswise. Top with a dollop of guacamole and a few chile pepper flakes. Other options: hummus or goat cheese.

10 minutes - TOMATO-BASIL SALAD

  • Toss 1 pound tomato wedges with 2 Tbsp each balsamic vinegar and olive oil. Add 1/2 cup total chopped chives and basil. Add salt, pepper, and 8 oz of small mozzarella balls.

15 minutes - FRESH GAZPACHO

  • In a blender, whirl together 8 Roma tomatoes, 3 chopped scallions, 1 cucumber, 1/2 each red and yellow bell peppers, 2 Tbsp olive oil, 2 Tbsp red wine vinegar, 1/4 tsp chile flakes.

20 minutes - POSTRUN PASTA

  • Toss together 2 cups cooked pasta, 2 cups roasted cherry tomatoes, 5 oz cooked shrimp, 1/2 cup pasta water, and 1/4 cup chopped basil. Season with salt. Sprinkle with Parmesan.
