Sweet Potato Hummus

Don’t feel like spending $6 on a jar of store-bought hummus? How about you spend a couple bucks and create your own nutritious and delicious snackable hummus for yourself? Check out the recipe for this anytime-snack below!

Sweet Potato Hummus

INGREDIENTS:

  • 1 cup packed mashed sweet potato (about 1 large potato)
  • 1 ½ cup chickpeas (about 1 can, rinsed)
  • 2 cloves garlic, minced
  • 2 tsp maple syrup
  • 4 tbsp extra virgin olive oil
  • 2 tbsp tahini
  • 2 tbsp apple cider vinegar
  • Salt and pepper to taste

DIRECTIONS:

Peel the potato and cut it up into chunks. Boil until soft when poked with a fork. Mix all ingredients in a bowl. Using a food processor, blend together. Refrigerate until cool. Serve. Easy as that!
