Recipe Makeover: Potato Salad

Potato salad is a classic staple at any summertime gathering. However, with over 350 calories and 20 grams of fat in the average serving, it can really weigh down your plate! As an alternative to the traditional mayo-heavy favorite, try making this lighted-up version that is both beautiful and tasty! Purple potatoes, red bell pepper, cucumber, and jalepeno give this side a lot of flalvor and nutrients! And with absolutely no mayonaise, you can enjoy a this yummy salad with a lot less fat than it's cousin in the deli case.

Perfect Purple Potato Salad 
Serves 5

INGREDIENTS
1 1/2 to 2 lbs purple potatoes, cut into bite size chunks
1 T extra virgin olive oil
2 T apple cider vinegar
1 cup chopped celery
½ cup raw pistachios
1/2 red bell pepper, diced
1/2 cup diced English cucumber
1/2 cup diced sweet onion
Freshly ground black pepper to taste
1 T extra virgin olive oil
2 T lemon juice
1 T minced Jalapeno
1 T each fresh chives, thyme, parsley, and oregano, finely minced
1/2 t salt or to taste

DIRECTIONS
Put the potato chunks into large saucepan with enough water to cover and bring it to a boil over high heat. Turn the heat down to simmer and cook 5-7 minutes until the potatoes are just tender.  Drain off the water and put them in a large mixing bowl. Add the olive oil and vinegar to the hot potatoes and mix well.  Add the remaining ingredients and toss well to distribute flavors evenly. Adjust seasonings to taste.
