"Fruits and Veggies - More Matters" is a health initiative sponsored by Produce for Better Health Foundation and the Centers for Disease Control and Prevention. The goal of the campaign is to promote the health benefits of adding MORE fruits and veggies to your diet. To help encourage you to fill your plate with the recommended half fruits and vegetables, they have come up with a list of the Top 10 Reasons you should be eating more!

  1. Color & Texture. Fruits and veggies add color, texture...and your plate.
  2. Convenience. Fruits and veggies are nutritious in any form - fresh, frozen and canned, so they're ready when you are!
  3. Fiber. Fruits and veggies provide fiber that fills you up and keeps your digestive system happy.
  4. Low in Calories. Fruits and veggies are naturally low in calories.
  5. May Reduce Disease Risk. Eating plenty of fruits and veggies may help reduce the risk of many diseases, including heart disease, high blood pressure, and some cancers.
  6. Vitamins and Minerals. Fruits and veggies are rich in vitamins and minerals that help you feel healthy and energized.
  7. Variety. Fruits and veggies are available in an almost infinite variety...there's always something new to try!

  9. Fun to Eat! Some crunch, some squirt, some you peel...some you don't, and some you grow right in your own backyard!

Zucchini, tomatoes, eggplant (or other vegetables you can cut into rounds) cut into 1/4 inch rounds 
Olive oil 
Sea salt 
Chopped garlic 
Fresh herbs such as oregano, thyme, sage, basil, etc. chopped fine 
In a baking dish, size depending on how many vegetables you are using, pour olive oil, sea salt and chopped garlic into a small pile and mix a bit. Cut zucchini, eggplant, tomatoes, into 1/4 inch rounds. Dredge the rounds in the oil, salt and garlic as you arrange the rounds on end alternating the zucchini, tomato and eggplant. Next sprinkle with the fresh herbs and drizzle with a little extra olive oil. 
Bake at 350 for one hour covered and another 30 minutes uncovered or until eggplant is soft.
