Grilled Honey-Glazed Salmon with Peach Salsa

It's almost summer, which means it's grilling season! Get creative with your summer cooking and use the new season as a way to jazz up your meals with fresh flavors.

Check out this recipe for grilled honey-glazed salmon with peach salsa. Salmon is a great source of healthy fats and has a delicate, buttery flavor that goes very nicely with sweet summer fruit. The peaches in this salsa could be swapped for pineapple or mango, for a more tropical flare! Try to purchase wild-caught, Alaskan salmon, if possible.

Grilled Honey-Glazed Salmon with Peach Salsa
Serves 4

3 T honey
3 T Dijon mustard
2 T balsamic vinegar
½ t ground pepper
½ t garlic salt
4, (6-ounce) salmon fillets

Combine first 5 ingredients in a bowl and brush over fish. Coat grill rack with cooking spray, place salmon skin-side-down over medium heat. Cook salmon 5 minutes on each side.

3 ripe, fairly soft peaches, chopped
¼ cup red onion, finely diced (about 1/2 small onion)
¼ cup fresh cilantro or basil, chopped
½ lime, juiced
1 clove garlic, minced
¼ teaspoon kosher salt
1/8 teaspoon freshly ground black pepper

Add all ingredients and mix.
