Avocado Egg Salad

‘Tis the season of hard boiled eggs! These little packages hold a big nutritional punch. They are an “egg-cellent” source of easy-to-digest protein, and high in lutein and zeaxanthin, two antioxidants that promote eye health.  Eating eggs has also been linked to decreased cravings, lower blood pressure, and reduced risk of some cancers.

Try this recipe for Avocado Egg Salad. It’s a twist on traditional egg salad that swaps high calorie, high fat mayonnaise for healthy avocado and Greek yogurt! 

INGREDIENTS
2 hardboiled eggs, chopped (how to hardboil eggs)
2 hardboiled egg whites, chopped

2 small avocados, pitted and peeled
1 tablespoon plain 0% Greek yogurt
1 tablespoon fresh lemon juice
2 tablespoons chopped green onion
1/4 teaspoon Dijon mustard
Salt and freshly ground black pepper, to taste

DIRECTIONS
In a medium bowl, mash the hard boiled eggs and egg whites, avocado, Greek yogurt, lemon juice, green onion, and mustard. Season with salt and pepper, to taste. Serve on whole wheat toast, whole grain crackers, or in a lettuce wrap.
